SPECIAL EVENT AT COLLYER MARKET WITH HONEY SOMMELIER MARINA MARCHESE

Honey Sommelier and Author Marina Marchese of Red Bee Honey will present an exploration of artisanal single-origin honeys paired with delectable  hors d’oeuvres, cheeses, and desserts  prepared by local chef Mark Sharon on Thursday, March 29th  at Collyer Market in Westport from 7:00pm to 9:00pm.  Participants will be introduced into the vast world of singe-origin artisanal honeys and learn how their unique flavor profiles marry with specialty foods and cheeses to create harmonious blends that add depth to simple appetizers and desserts for parties and special events. Menu items will include Pear & Gorgonzola Wontons drizzled with Pumpkin Blosson Honey, Lamb Lollipops with Mint & Linden Honey, Yellow Beet Bruschetta on Rustin Crostini with Micro Arugula and Buckwheat Honey, and Lemon Rosemary & Cheese Tartlettes with Apple Blossom Honey.  A cheese course
 and dessert will round out the offerings.  The cost of this Collyer Market special event is $35 per person and seating is limited.

Marina Marchese, author of the international selling book, Honeybee: Lessons from an Accidental Beekeeper, is a passionate and inspirational speaker who has dedicated her life to honeybees and educating chefs, foodies and beekeepers about the culinary delights of artisanal single-origin honeys. The founder of Red Bee® Honey as well as The American Honey Tasting Society, Marina is an unparalleled connoisseur of honey from all over the world. She is also the current president of the Back Yard Beekeepers Association of Connecticut and enjoys sharing her personal reinvention story of her journey from being an international giftware designer to becoming a celebrity of the honey world while developing one of today’s fastest growing artisanal honey businesses.  Red Bee Honey, located in Weston, Connecticut, specializes in single-origin pure artisanal honeys in which the essence of each varietal is determined by the nectar from the flowers visited by the honeybees.

Collyer Market, co-host and location of this month’s Westport Honey Tasting event, opened in March of 2011 has allowed husband and wife owners and operators, Mark Sharon  and Reed Collyer, to further their commitment to healthful, seasonal and regional cuisines used in their catering business, Collyer Catering.   The unique Market space is located adjacent to the Collyer Catering kitchen, and operates as a retail market providing gourmet grab and go lunch and prepared foods.  The addition of farmer’s cheeses, unique artisan gifts, and culinary tools to the Market, make it the go to for all Fairfield County hostesses.

Established in 2000, Collyer Catering is located in the Saugatuck area of Westport.   Collyer and Sharon stand behind their philosophy of hand-crafting nearly everything that leaves their kitchen– a process that results in consistently superior products.  They created Collyer Catering after working together for several restaurants and caterers in Greenwich.   Sharon, a graduate of Johnson and Wales Culinary Institute, brings his exceptional palate, knowledge of food and world-class expertise to the homes and event spaces of Connecticut and New York.  Collyer’s experience managing restaurants and events have created a company dedicated to outstanding and creative foods, stellar service, and an unwavering willingness to go the extra mile for their clients.  In 2007, Nancy Hogan joined Collyer Catering as Catering Manager enabling the duo to take on larger events and more challenging designs.
